From our first organic olive grove in the area of Prophet Elias chapel, in the village of Pethelinos, is born an olive oil that captures the purity of the land and the art of cultivation.
Here, the noble varieties Lefkoelia of Serres, Petroelia of Serres, Halkidiki, Koroneiki, Amfissis, Kalamata and Megara coexist, creating a harmonious blend of aromas and flavors that reflect the authentic character of our region.

Thirty years ago, in a small olive grove in the village of Pethelinos, Serres, just a few meters from the home where our father, Giannis, grew up, our grandfather, Theodoros, planted ninety olive trees. With no previous knowledge or experience in olive cultivation, he selected several different varieties with one simple purpose: to produce enough olive oil to meet the needs of his family—a traditional Greek family.
Eleven years ago, the small olive grove passed into the hands of our father, Giannis, together with the neighboring field. This was long before POTEUS had even been conceived as an idea. As a family, we decided to expand the grove by planting more olive trees, not only to secure our future supply of olive oil, but also to reconnect with the land. It began purely as a hobby—something we genuinely loved, something that would nourish both body and soul, offering an escape from the noise and demands of everyday urban life.
Biodynamic from the very beginning? Planting aromatic herbs between every row of olive trees would require considerably more work—but could we do it? Yes, we could. So that became our path.
In the heart of the vast plains of Serres rises the hill of Prophet Elias, crowned by its small chapel, where the village celebrates its annual festival every 20th of July. Pethelinos is a place deeply rooted in Ancient Greek history—a heritage reflected both in our name and in the village itself. The name POTEUS, meaning “lord” in Ancient Greek, echoes this historical identity.
In antiquity, the village stood on the shores of the ancient Lake Kerkinitis. Like the nearby village of Paralimni (“beside the lake”), Pethelinos was once lakeside, serving as a natural harbor and the port of the ancient city of Gazoros. This was the land of glorious Macedonia, of King Philip II and Alexander the Great, from where many of the soldiers who accompanied the Macedonian campaign into Asia once came.
It is here, on the hill of Prophet Elias, in the ancient land of Serres, that we cultivate our olive grove using both organic and biodynamic farming practices.
Our olive oil is a naturally occurring blend, where the ancient local varieties Petroelia of Serres and Lefkoelia of Serres grow alongside the varieties of Halkidiki, Megara, Amfissa, Koroneiki, and Kalamon in carefully aligned rows.
Between the olive trees we cultivate rosemary, oregano, lemon balm, lavender, and savory. These aromatic plants naturally enrich the soil through biodynamic cultivation while also supporting local biodiversity. Rosemary blossoms are especially valuable, as they provide one of the final flowering periods before winter and one of the earliest before spring, helping sustain the bee colonies that we move into the area each year for overwintering.
The location of our olive grove was chosen with great care. Although surrounded by the fertile plains of Serres, this unique site brings together two essential conditions for exceptional olive cultivation: the influence of the ancient natural harbor and the elevation of the hillside. Combined with the daily sea breeze that arrives every afternoon after 3:00 p.m., these conditions create a distinctive microclimate that shapes the character of our olives.
Our grandfather’s experiment with ninety olive trees had finally fulfilled its promise.

Its premium packaging proudly bears the name PROFITIS, paying tribute to both the Prophet Elias and the land that has nurtured our olive grove for generations.
This early harvest olive oil is exceptionally rich in phenolic compounds, with a total phenol concentration of 1,193 mg/kgand a D1 index of 926 mg/kg.
Harvesting takes place in early October each year. The olives are continuously milled in our own olive mill, never more than two hours after harvesting, ensuring maximum freshness and preserving their valuable nutritional compounds.
The olive oil is stored in temperature-controlled stainless steel tanks equipped with thermal jackets and nitrogen sealing, protecting its freshness, aroma, and nutritional integrity.
Every step of the process is designed to ensure, certify, and guarantee an olive oil of genuine premium quality.
The result is an extra virgin olive oil with a vibrant green fruitiness, balanced bitterness, and distinctive peppery finish. Dominant aromas of freshly cut grass, tomato leaf, and tomato stem define its primary aromatic profile.
Because the different olive varieties are crushed and malaxed together during milling, they naturally become one, creating a second, more complex aromatic profile with delicate notes of nuts—particularly walnut—leading to a remarkably balanced and elegant finish.
Rich in polyphenols and exceptionally high in oleocanthal, this olive oil offers significant nutritional benefits. Its outstanding oleocanthal concentration has earned it an official health claim certified by the Faculty of Pharmacy of the National and Kapodistrian University of Athens, recognizing it as a valuable natural ally in supporting overall health and well-being.
